Where Does Chocolate Come From?

Like many foods, chocolate begins as a tree—specifically, the Theobroma Cocoa Tree, indigenous to Mexico, Central America, and Northern South America. However, Africa currently holds 70% of the world’s cocoa trees. The earliest known observation of using cocoa seeds dates back to 1100 BC. These beans are roasted at a low temperature, separated from the shells, and ground into a fine powder called ‘chocolate liquor.’ The liquor is often processed into two components—cocoa butter and cocoa solids. Manufacturers use cocoa butter as an ingredient in their chocolate bars. Cocoa solids, or cocoa powder, is what we use to make treats like chocolate cake and cookies. 

This delectable concoction is often labeled as unhealthy or even fattening. But, research shows that pure chocolate can reduce the risk of heart disease, is a rich source of antioxidants, and improves blood flow. Occurring annually on July 7th, World Chocolate Day supposedly marks the day that chocolate made its grand entrance into Europe in 1550.
